Making a pizza for a vegetarian girl tonight. I'm actually very good at homemade pizzas but leaving out meat kills all my inventions so far. I make my own base using bread dough and also my own sauce using tomato puree, red wine, spices and 'n bit of sugar.

First Question : Can I actually use a tomato based sauce on a vegetarian pizza? Not in the sense that it's not vegetables but whether the combination would work.

Second Question : If yes, then what combination of ingredients would work with my tomato sauce?

Last Question : If all of this is sounding like a bad idea to you, please help by prescibing a different recipe!

How about the classic margharita? Just tomato and basil with some parmesan and mozzarella. I don't even use a tomato sauce for it, just the fresh tomatoes, but I think it would be good with a sauce as well.

    Or a calzone with egg?

Or tomato, onion, garlic  and mushrooms?

Can you use fish? Pizza with anchovies is one of my favourites

Just let your fantasy go wild. Nothing much can go wrong Iif your ingredients are of good quality, just don't overload the dough.

    Good luck!

There are a number of veg-pizza recipes here in the forum. I know because I've posted them. LOL. I'm not at a friendly PC or I'd give them up to you now. Just do a little "SEARCH" and you'll find them.

It may come as a surprise to you but most pizza in italy is vegetarian.

    Tomato and mozzarella

    on which you can add:

    - grilled thin eggplant slices

    - sliced onions

    - grilled thin zucchine slices

    - thinly sliced mushrooms (they cook in the oven)

    - grilled peppers

    white base with

quattro formaggi (four cheeses, usually one being gorgonzola)

sliced onion slowly sauteed in olive oil, black olives, cheese

broccoletti (broccoli rape) boiled till tender then fried in garlic and oil and placed on the pizza halfway through baking

    cheese and zucchine flowers

baked white pizza (plain) with rocket and quartered cherry tomatoes (and fresh mozzarella)

The difference with italian pizza is that the filling is not piled high to the sky, it's low and flat, and there are no huge chunks of vegetable - you should taste the base, the base is not a dish.  But then you can make american pizza too, which has its own tradition.  Just wanted to give you some alternatives you may not have thought of.

You can put virtually anything on a pizza, you can even make it vegan with no dairy at all.  It's the easiest thing in the world to make vegeterian.  Just put any ingredient you want on it, it all works.  Last week I made a really nice pizza with a little bit of tomato sauce and some eggs on top (and gunciale but you don't have to use that of course).  There's nothing more satisfying than cutting into a pizza and egg yolk spills out everywhere.

Also, don't forget that some toppings can be added after you cook the pizza.  So start with a base of dough, sauce and mozzarella.  Cook it.  When it comes out of the oven top it with dressed arugula leaves and olives.  The arugula almost wilts and brings a freshness that is sure to please any vegetarian.

Smoked olives are very nice and go well with orange slices and red onion.

    Radiccio and blue cheese

    The list is endless.

In Italy I saw the craziest things go on pizza.  Boiled eggs, fresh peas, even spaghetti.  One of my favorites was heavy cream, yes heavy cream, just pour it over the pizza and bake it.  There is nothing that doesn't belong on a pizza so try it all.

Dead pigs and cows, they're vegetarians afterall. :D

I like artichokes on pizza. had the egg on pizza in germany, wasn't a fan. But that was probably the absolute worst pizza I ever had in many other ways as well.

I've had Chinese pizza with a hoisin sauce instead of tomato that worked out pretty well. Plenty of thinly cut vegetables can work in that one, sort of like a mu-shu pizza. And yes, it had mozzarella cheese on it.
