angel food cake tips

    I have never made this cake before and i was wondering if any one had some tips on making this cake awesome:

    recipe
    • 1 3/4 cups sugar
    • 1/4 teaspoon salt
    • 1 cup cake flour
    • 12 egg whites
    • 1/3 cup warm water
    • 1 teaspoon orange extract
    • 1 1/2 teaspoons cream of tartar
    It goes in at 350, was done in about 45 mins. We dont have any bunt pans at the restraunt so i made them in shallow 3rd pans.

    You do not use the regular Bundt pan for this,  at least not the one with designs at the bottom... you need the one where the bottom can be removed,  then as soon as it gets out of the oven,  turn it upside down at least for one hour or until it is totally cooled.  Angel cake is almost fool proof.  It can be colored.. I color mine very pale pink sometimes.
