Aging chuck roll

    I have salted and dry rubbed 20 poundish chuck rolls to good effect. I covered them in plastic wrap and let them sit in the fridge for four or five days. I have never tried dry aging them in the fridge uncovered without salt for a few days. This works great for prime rib. If anyone has done this successfully,. I would appreciate some info.     if it is whole chuck roll in the cryovac bag just wet age in the sealed bag.
