AGA conference, butchering

    American Grassfed Association is having a conference in Lexington KY the first week of Feb. One of the sessions is a 3 hour butchering demo in 38* meat locker.....given by a Master butcher with serious educational credentials.

    Dr. Gregg Rentfrow, Ph.D, is not only a Master Butcher, but holds three degrees, and a Doctorate in Meat Science and Muscle Biology. He will lead you through the cutting of the carcass, how to handle a carcass, how to buy whole animals for best utilization, how to prepare a "cut sheet". How to talk to your butcher and producer to get the best yield from the carcass and the best profits . Dress warmly for this session, the meat production lab is kept at a cook 38 degrees. This is a working meat science lab.


    I'm thinking about going just to watch Dr. Rentfrow do his thing. Anyone else going or know a master butcher? Master butcher is not a term I'd heard of prior to this......
