Ok so making cake pops but needing to make small flowers what kind of fondant is best? The tutorial on YouTube ALL state a mixture between "molding" fondant and regular fondant?

If you need to make flowers, gum paste will dry hard. You can also get CMC powder and knead that into fondant to help it harden more and can be used as well.
I would go with gum paste though. It can be rolled thinly to get a more realistic flower and will dry pretty fast.

Yes, usually a mix of 50/50. The addition of gumpaste helps it roll more thinly and makes it more pliable, and helps with your work time as well. The decorations won't dry rock hard like gumpaste alone does.
A mix of the two is good when making ruffles, fondant alone won't give you as good of a ruffle effect when thinning the edges.
