I assume you are a member of the ACF? I took it and I suggest you go on the ACF website, go under certification and find the tab ( I believe it is "e-culinary") that can sign you up for certification help. I paid a fee, I don't remember how much, and was able to use practice tests ( actual ones that had been administered). They were so valuable, I wouldn't have passed without the practice. The test is fair, but extensive. A wide range of off-the-top-of- your-head knowledge is required. So get the practice tests and you will see what they will be asking and what you need to prepare for.
