    Financiers au café (soaked in dark rum & honey ) with (Bitter-Sweet) Glaçage au chocolate and frozen Cappuccino.


     

    French Toasted Challah with Cheesecake Ice Cream and Melba sauce.
    Now THAT is a breakfast!

    Panna Cotta with Caramel and Fresh Berries.
    Woops, no presentable fresh berries? Bah, just throw some Plum Compote around it.


    Angel Food Cake with Plum Compote Almond Tuile, and Mascarpone Sorbet

    Financiers were the only thing I could not eat, way too crazy sweet for my tastes, even with the extra-bitter chocolate sauce to tone it down.
    Took a bite, chewed it, when chef wasn't looking spit it out into a side towel, then transferred it discretely to a waste can. I'm a savory, not a sweet eater.

    I really wanted to make my (now world famous) Habanero Mint Chocolate Chip Ice Cream, but it was dismissed outright. It really is an amazing thing. Done right, your mouth starts to tingle, but the cream and cold temper it nicely, and the chocolate pairs perfectly. It only really burns about 15 seconds after you stop eating.
