thank you for pointing out a few things I may do better however I respectfully disagree with sanitizing a knife when moving between vegetables. when going from veg ro meat or fish I compleatl agree. however when just going from veg to veg witch are ingredients that can be eaten raw there should be now worry about cross contamination.
I did not see him clean his knife. He wiped it with a towel he did not not sanitize. The lid was open on the work station refrigerated unit, it should be closed when not in use. The mushroom box was placed on the work station after sitting where? The mushrooms should be cleaned before slicing. I know this is picky but if you are teaching everything should be correct.
