4th of July menus. What are you doing this year?

    My menu so far is pulled pork, ribs, grilled whole turkey, 2 kinds of baked beans(with bacon and with smoked turkey, I have some Jewish guests), veggi platter, cole slaw with my homemade creamy dressing, and potato salad. Standard American BBQ fare and nothing fancy. Cooking for 30 this year so 4 pork butts, 4 slabs of ribs, 14 pound turkey, 2 crockpots of beans etc.

    If all goes well I'll be searing fresh big eye tuna belly on the BGE.

    Roasting a whole lamb over a LARGE charcoal grill. This is going to be fun! Haven't decided on the sides yet.

    Nothing in ink yet -- In fact, I'm not even sure we're having the party here or not -- but assuming things are what they usually are...

    Just your typical "California Beef Barbecue."

    Starters: Besides the usual olives, crudites and cheeses on the table, I ask the people who say they want to help make and bring those -- so, Potluck! Guacamole frequently happens.

    Proteins: Grilled top sirloin, shrimp or possibly lobster, and hot dogs; barbecued (smoked) either beef short ribs or pork back ribs, and chicken.

    Breadbasket: Not really. Not for the Fourth; and not really something I do for barbecues anyway. So... fresh sourdough bread from the supermarket bakery.

    Sides: Caesar salad, macaroni salad, cucumber salad, beans (frijoles de la olla), salsa cruda.

    Desserts: Fruit pies of some sort, and homemade ice cream.

    I'm just now planning for Memorial Day, 7/4 is too far off!  I've been promising my husband to do my famous (actually Tyler Florence's famou) herb grilled chicken.  It's like regular grilled chicken except a couple of minutes before the end of cooking we baste it with a sauce made of pureed roasted garlic, lemon juice, olive oil and fresh herbs parlsey and thyme.  It's so good!  Maybe some roast corn on the cob to go with it and a cuke salad.

    Once you try it you'll want to baste everything with this sauce lol.  You'll want to add it to your rice.  You'll want to add it to potatoes.  You'll want to spread it on pizza.  It's that good.

    I haven't thought that far ahead either. Usually something simple though. Burgers, dogs and such.

    I'm finishing up on a smoked pork shoulder right now my son requested for this holiday. Probably another hour and a half of cooking to go.
