3 ingredient challenge

    Hello all, my local NPR radio station is hostin a cooking challenge and of course I'm going to enter. The deadline is dec 3 so I have plenty of time but I'm so uninspired.

    There are 2 given ingredients, chicken and an allium. And we have to come up with a 3rd ingredient. Oil butter salt pepper herbs are free. Not sure why they're not trusting us to come up with our own 3 ingredients, I think we're capable of being way more creative than they give us credit for.

    First thing that popped into my head was some
    sort of wine, sake or fortified wine.....vermouth, sherry, marsala, madeira.....something along those lines.....lots of bang for your buck with any of those.....adds flavor, liquid and makes for incredible silky sauces when (free)butter is added.
    There are other great liqueurs that i like to cook with such as limoncello, orangecello, tuaca, and canton(ginger cognac), but they are usually for a specific dish......the fortified wines are more for 'everyday gourmet'.

    Koukou,

    After rereading my post i realized that i did not really answer the question you asked which was what 3 ingredients would we use. My response was based on what i would use as YOUR third ingredient....sorry 

    just curious though....can your third ingredient or i guess any of the 3 ingredients be a blend of ingredients such as a spice blend/rub, curry powder or paste or a pesto?  if that info was in the link you sent, i admit to not reading it....my bad.

    I'm gonna go with heirloom tomatoes, and shallots. Assuming its whole chicken to make a chicken provencal. Lots and lots of herbs. Is lemon free? Really needs lemon.

    you're most of the way towards Chicken with 40 cloves of garlic.

    Stir fried chicken with leeks, assuming they let you use Chinese soy, wine, and such as "spices" which is more how the Chinese use them.

    I imagine something like a chicken fricassee with chicken, pearl onions and mushrooms could be made to work.

    WE DID A THREE INGREDIENTE CHICKEN DISH FOR THE RESTAURANT TODAY. 

    Chicken roulade: Herb rubbed chicken breasts that were stuffed with ham or some type of thinly sliced meat. Rub the chicken with a variety of herbs and garlic , chives etc..... Roast or cook in a pan. 

    Cut and serve hot. 

    Its easy in my opinion and since you can use herbs then go crazy. Plus garlic and ham go great with this dish. 

    I also thought of the idea of doing a lemon chicken stuffef onion , with alot of herbs . but it may be complicated and time consuming. Plus onions can be a b*tch to stuff.

    Ex-gf was "allergic" to so many things, so limited ingredient cooking is something i have some experience with. 

    Braised Chicken with Sauted Asparagus. Serves 4

    Chicken

    1) Whole Chicken Cut in to pieces.

    4) Tbsp Olive Oil

    2) Tbsp Butter

    1 1/4)Cup water (if they allow stock then by all means use stock)

    Garlic(how ever much you feel is necessary I used 2 crushed cloves)

    Salt and Pepper

    Either Rosemary or Thyme for herbs

    Heat the oil in an electric skillet until hot. Season the chicken, then fry until golden brown. Add the herbs, garlic, butter, and water to the skillet. Reduce the heat to low, partially cover the skillet, and braise until the chicken is  tender, 30-40 minutes. Turn the chicken about halfway through

    Aspragus

    1) Bunch asparagus, approx 1lb

    2) Tbsp Olive Oil

    1) Tbsp water

    1) clove garlic, peel and halved 

    In a large saute pan, high, add asparagus, olive oil, water, and garlic. Cook for about 2-3minutes uncovered. Toss, cover the pan and cook for 1 minute. Toss. Cover and cook until tender with a little browning, 4-5 min. Salt and Pepper to taste. 

    If you get lemon/lemon zest as freebie definately throw some in with the asparagus as it really helps brighten it up(though lemon pepper seasoning technically could be called a spice so i wonder if that could substitute with out tasting like horrible.)

    This is more than likely going to end up being my dinner tonight now that I think about it.

    Lemon was my first question, but it is not listed as a free ingredient.  I think I have come up with an idea but it needs some testing because it is complex and so far utilizes only the 2 given ingredients and butter/oil and herbs/spices.  I'm not going to give it away until I enter the contest though.

    Anyway, I'm more interested in what you all would do with 3 ingredients of your own, not necessarily chicken and onion.

    I'd say shallots and bacon. Butcher the chicken, make a stock from the carcass with some of the shallots. Pan fry the chicken parts and hold. Fry some chopped bacon and whole shallots in the same pan, deglaze with some of the stock. Add salt, pepper, some lemon thyme and reduce. Plate with that sauce.

    My current favorite favorite 3 ingredient dish would be a nice bowl of pasta with oven roasted tomatoes and garlic, nice and low for about 2 hours in the oven i usually make 2 pans of tomatoes because i snack on them constantly . Its dinner or lunch at least 3 times a week, mainly because it keeps well and the microwave at work is my only option most nights. The joys of a third shift job :)

    Though roasted chicken, herb potatoes, and sauted spinach is another staple which i find is a fantastic 3item ingredient dish, albeit simple.

    With your 3 ingredient list i'm thinking a chicken breast stuffed with peppered goat cheese and braised leeks.....brown stuffed breast, finish in oven and make a pan sauce, maybe adding just a bit of goat cheese and fresh thyme.....slice chicken on the diagonal,plate on bed of more braised leeks, spoon sauce on top.
    As for my 3 ingredients: just a few
    SEAFOOD:
    Grilled Ahi with tamari glaze,wasabi or pickled ginger(tough choice)
    Grilled Halibut with fried caper-lemon butter sauce
    Grilled Copper River Salmon or Scottish Sea Trout with miso or hoisin glaze or dill sour cream sauce(cold)or caper dill sour cream sauce(cold)
    Black cod in pappilotte with summer squash or asparagus and lemon
    Stir fried spicy sichuan shrimp
    Grilled Italian spiced marinated shrimp.....lots of fresh lemon wedges
    Or chipotle in adobo marinated shrimp.....lots of fresh limes
    Diver scallops...polenta dusted sauteed.....sage brown butter sauce
    Fresh linguine with basil pesto and lots of reggiano parmigiano
    Mashed potatoes with butter and cream
    Mashed sweet potatoes with butter and maple syrup

    A few more......just kidding about the potatoes

    Eggplant parmesan if marinara is counted as one ingredient
    An appetizer salad of sliced herb roasted eggplant with slices of fresh mozzarella and heirloom tomatoes......balsamic reduction drizzle would be my preference but to keep it at 3 ingredients a drizzle of good evoo with fresh basil would do
    Grilled italian sausage with peppers and onions
    Acorn squash filled with long grain and wild rice pilaf with dried organic cranberries
    Thai red curry coconut shrimp....
