The Silver Point II 2 piece Santoku set includes a 7-inch hollow ground santoku and a Santoku knife sharpener. The dimples on the side of the blade cause air pockets to form to allow food to release easier from the blade. The Santoku sharpener is designed to cut a 17 degree angle on the narrower Santoku knife. Typical stamped knives are punched out like a cookie cutter. Wusthof Silver Point II knives are Laser Cut. This intricate manufacturing process is superior to other "cookie cutter" methods as it is more precise and leaves the knives with less distortion.
