Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. This 7-inch granton edge santoku knife allows you to make thin, clean slices. The hollow grind side of the blade allows air pockets to form so meat does not stick to the blade. This also allows for less friction in cutting which lets more juice from the meat remain in the meat. The santoku is a cross between a cook's knife and a vegetable cleaver. It has a thinner angle to allow for a very sharp and thin cut.

    Pros - This knife has a great feel in the hand. It is very sharp and lightweight.
    Cons - I was led to believe that the knife would lend itself to very clean cuts and that material would not stick. That is not the case.
    I love Wustof knives and am partial to their look and feel.   That being said this not my favorite knife.   It didn't hold its sharpness for very long and doesn't really cut and release like I expected from a Santoku knife design.   The performance is very much like a chef's knife from Chicago Cutlery that my wife and I recieved for our wedding, albeit much lighter and easier to handle. 

    It is a high quality knife and I would recommend it but I would also suggest that expectations may need to be adjusted to truly enjoy its performance.
