Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. This 7-inch granton edge santoku knife allows you to make thin, clean slices. The hollow grind side of the blade allows air pockets to form so meat does not stick to the blade. This also allows for less friction in cutting which lets more juice from the meat remain in the meat. The santoku is a cross between a cook's knife and a vegetable cleaver. It has a thinner angle to allow for a very sharp and thin cut.
