It's been a long time since I had a classic saute pan. My wife took over the kitchen and I was busy with my marketing company for well over 15 years. She's all about no-stick, easy clean. I've always love the 'old ways.'
This Christmas, I requested and received a proper saute pan. This is a beauty and it's just what I used back when I was a line chef with The Mad Batter in Cape May, NJ.
I've just seasoned the pan and cooked a Christmas omelet in it for the family.
It is wonderful and a delight to work with.
They've bowed to the modern era and given it a no-heat handle which I didn't think I'd like, but my wife insisted on it.
