General Information

This 3 Qt enamel Dutch oven is great for cooking, marinating, refrigeration and freezing. The color porcelain enamel on cast iron can be used on gas, electric, ceramic and induction cooktops, as well as in the oven. Not recommended for use on outdoor grills or over open outdoor flames. Not for use in microwaves. Lodge Color Porcelain Enamel on Cast Iron cookware is cast from molten iron in individual sand molds. The porcelain surface eliminates the need to season cast iron. The cast iron vessel has superior heat distribution and retention, evenly heating bottom sidewalls and even the lid. Tightly fitting lid seals in moisture. The excellent heat retention reduces the amount of energy needed for cooking. Two layers of very hard, glossy porcelain enamel are chip resistant and easy to clean. Lid knob is oven safe to 400 degrees Fahrenheit. The black rim on the pot is matte porcelain, not exposed cast iron. Hygienic porcelain enamel is non-reactive with food. Although dishwasher safe, hand washing with warm soapy water is recommended to preserve the cookware's original appearance. 9 3/4" diameter, 3" deep. Island Spice

I bought the Lodge 3-quart dutch oven about a week ago and have used it twice now for baking sourdough bread (soon I'll try short ribs).  So far, it's great.  Easy to clean, cooks evenly, feels sturdy.  Unlike the 3-quart Le Creuset dutch oven, the Lodge dutch oven is significantly more economical for those who aren't quite ready to take a $100+ plunge into this kind of cookware.

The only drawback is that the Lodge handle is only temperature safe until 400 degrees.  That means if you're pumping your oven higher than that, you have to unscrew the handle and go without it (which makes it very hard to take the top off to check on your progress) or you have to purchase a replacement handle which can withstand higher temperatures.  So far, we've been going without the handle but have an order in for a replacement stainless steel handle.  Other than that, I'm a big fan.  Plus they come in pretty colors so that's a bonus.  /img/vbsmilies/smilies/smile.gif

This is also my first Dutch oven, and I like using it a lot. However, one other drawback is the rounded bottom corners. That way the entire bottom surface cannot be used for browning.
For braised short ribs try the Pioneer Woman Cooks, or Mario Batali.
