J A Henckels Profession S Series 8" Chefs Knife 31021-203 - Henckels Professional 'S' knives feature the finest Henckels' blades, along with a two-piece handle held in place with three stainless steel rivets, for a sturdy, traditional look and feel. These knives are made in Solingen, Germany, and are forged, not stamped. Blade density is improved using the Henckels' FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Larger knives are crafted using Henckels' exclusive Sinternal Component Technology, which fuses blade, bolster and tang into a single, seamless piece for precision, easy handling, and balance. Pros: Great for home kitchen use
Cons: Slippery handle when wet
This is your standard, good quality kitchen knife as found in the mainstream retail stores.  Nothing too fancy, but a solid performer for home kitchen use.  The knife is nimble enough to manage dicing and mincing, while sturdy enough to chop through chicken bones.  No problems with this knife ever. If you enjoy sharpening your own knife, plan for a little extra work.  But nothing unmanageable.  The handles do get rather slippery when wet, so wash and towel dry accordingly.
