  • This 7-in. Vegetable Knife is one of Global's most popular and loved knives. Excellent choice for prepping fruit and vegetables. The wide breadth of the blade can be used as a spatula to plate freshly sliced ingredients. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

    Pros - versitile
Cons - hurts hand after a couple hours
Great all round knive, hard steel takes a while to get a new edge on, but keeps it once it's there. Made for vegetables but good for almost anything. I love this knife and use it every day in the commercial kitchen. My mother liked it so much when I took it over for Sunday lunch I had to give it to her so now I own another one. I have big hands so it hurts after a couple hours of hard chopping because where the handle joins the blade it's bare steel. But that's nothing to put you off.... if you need a great all-round kitchen knive this Global is a beauty. Highly recommended.

Pros - Holds egde, comfortable grip, ambidextrous, nice weight, good balance
    Cons - None
The knife I am most comfortable with and use the most is an 18 cm Global vegetable knife.

It has a solid feel and a grip that is comfortable to my large hands.Unlike many stylized grips, it is also ambidextrous, which allows me to cut with the hand that is most convenient rather than being designed to only be comfortable in the right hand.

This knife holds an edge well and since I tend to touch-up the edges on my knives regularly, I have only had to truly sharpen this knife once since buying it in 2001.The 15 degree edge that is delivered with Global knives means that they will deliver precise, thin cuts like few other knives in it's class.

In the years of use I have gotten from this knife, I can think of no complaints.

I own this knife along with global utility knife and global flexing boning knife Global 8" chef knife.I like them all. They are light and very durable for all situations. The only global I did not like was the ceramic steel, this steel just was not for globals it took forever to hoan these knives with ceramic steel. I have a nice diamond steel and works much better and faster 2 or 3 strokes on each side and done. hope this is helpful.   also never did have the pain from chopping !!
