Pantelis Loris. was born on a small beautiful Greek Island called Chios. While growing up, Greek cuisine was always around him in his house. His mom Maria cooked some of the best Greek dishes and pastries for their family. Watching his mom prepare certain dishes such as, pastitsio, spanakopita, roasted lamb or even something simple like a horiatiki salata was very inspirational to him. He always tried helping and learning how to create these wonderful dishes. This is what led him to write this cookbook. The recipes that you will find in this book are traditional like his Mom's. However, they will have his own personal touch. He was able to create these recipes and write this book because his wife Rodanthy and his son Yanni inspired him every step of the way. These are some of his family's favorite Greek dishes, and he hopes they will become your favorite too!
