Combination sharpening and honing steel. Two excellent sharpeners in one! Features ceramic discs to hone blades to a razor sharp edge. Also includes a sharpening steel which should be used periodically to hone the edge of the blade prior to using the knife. The edge on a fine knife is actually made up of hundreds of very tiny teeth. With use, these teeth get bent or out of alignment. The steel puts them back into a straight line and thus restores the sharp edge. Our unique steel and disc style tool was designed by Chef Daniel Boulud to handle even the hardest of Japanese steels like those used in our DBK line.
