    Pros - A great look at one of the founders of our profession
    Cons - no real recipes
    Thanks to Ian Kelly, we have a great insight into the "professional" kitchens of the 18th century and into the man many consider to be the father of all modern chefs.  It's amazing what these men accomplished with what we would consider to be such primitive conditions.  A very inspiring read for anyone interested in the world of food.
