Pros - Perfect capacity for large canning applications
Cons - Not for 'household' use or putting up a few jars of pickles from the backyard and not for cooking meals
If you plan to put up a large number of Ball or Mason jars of fruits, vegetables, pickles, meats, preserves, relishes, jams, jellies for resale, a large family, or long-term storage - this is the presure cooker you want.

While you need not necessarily have a commercial stove, the conventional 30" kitchen stove, while useable, may not be the most efficient way to employ this cooker.  If you have a 5 or 6 burner, 36"-40" unit, you will be amazed at how quickly you can get through flats of jars.

We have a producing farm, and harvest time runs from Spring to hard frost in late Autumn.  We use Fagor stainless pressure cookers for certain foods we serve, and will review those cookers separately.  The industrial, heavy-duty nature of this all-American Wisconsin Aluminum Foundry cooker prohibits casual use in a household kitchen for dinner prep.  That said, if you are considering canning dozens of quarts or pints of food, you want to invest in this cooker.  It is a totally heat-efficient cooker, comes to pressure rapidly and is a breeze to clean up.  The serious pressure gauge is totally reliable, and the whole cooker is built to last for generations.  The time we save was well worth the cost.
