    chef-y terms...

hi all, as a big fan of cooking shows like top chef, the contestants are all variously titled -- executive sous chef, chef de cuisine, sous chef, etc.  what do all of these terms signify?  what is the restaurant hierarchy? thanks for the clarification, guys!

Tyler Florence's new restaurant Wayfare Tavern and Sous Vide question

Yea, ChefBillyB, I'm in agreement...even if it's safe, it's super unappetizing because of what we've been told!  Especially because sometimes underdone chicken has a different texture than what I (as a naive consumer) think is "done" chicken....  Either there needs to be massive consumer...

I'll start....  a nice cut of prime rib, just thrown on the BBQ with a generous sprinkle of coarse salt and pepper, plus fresh corn...

WOW Chris thank you!! The cheese spread and/or fondue recipe sounds amazing.  I will definitely try this!  You guessed it -- I'm always throwing away partially eaten chunks of cheese that are too old, and this sounds like a perfect use.  Excellent tips on freezing meat -- I really appreciate...
