Electric of Gas Tilt Skillet Better?

Mm yeah, I'll have to think about that more. What do you guys think of having the extra spout/faucet valve in the front? Is it useful? Or should I just get one without it?

Anyone ever use a hobart 140 quart mixer?

Thanks so much for our detailed response! I think you're right and I should just go with a 140 qt bowl to minimize batches. Is a "dipping pot" just using one of our pots and scooping out the mix? I would like to figure out a way for our team to lift the bowl easily without straining themselves...

Electric of Gas Tilt Skillet Better?

Thanks for all the great tips everyone! I'm leaning towards gas now but was considering electric lift. However, it sounds like manual lift may be even better given fewer potential issues. Also, any thoughts on brand? I know you said Cleveland is good. I was considering a Groen NHFP(E)-4. Are...

Electric of Gas Tilt Skillet Better?

Very good point! I was thinking gas is the better choice too but I do like the idea of more consistent cooking/temperatures (i.e. more foolproof) from what I've read.

    Gas to Electric Tilt Skillet?

Hey Everyone! I'm looking to buy a 40 Gallon tilt skillet to sauteed onions, cook soups, possibly pasta...etc. Does anyone have a recommendation for gas vs. electric? Any reason one is better than the other? And I read that the gas tilt skillet needs to light the pilot every time?  Thanks!

Dish Washer that will wash full size sheet pans?

Does any have any recommendations on commercial dishwashers that will fit & wash full-sized sheet pans? The dishwashers I've seen are a bit too small for that, and I'd love to be able to fit a bunch of sheet pans in a cycle. Thanks a bunch in advance!

Are combi ovens worth the price & what do they do (compared to a regular oven)?

Oh I see what you mean by 1/2 size ones. I thought you meant ones that had less shelves (10 rack vs. 20 rack), but I see you mean 1/2 sheet pans vs. full-size sheet pans. I see what you mean about being able to fit more on 1 full size ssheet pan vs. 2 half ones - my other thought around that...

Anyone ever use a 140 quart Hobart mixer? Trying to decide on 80qt vs. 140qt - Thanks!

Wow thanks so much for your response and for also asking your chef friend! Do you think it would make sense to get a 140 quart machine, but only put an 80 quart bowl in there for now? And then when it comes time that I need a larger bowl, I already have the machine for it instead of going out to...

Anyone ever use a 140 quart Hobart mixer? Trying to decide on 80qt vs. 140qt - Thanks!

I'm trying to decide between the 80 quart and 140 quart mixer for making falafel. I'm moving kitchens and am replacing the equipment. previously, I would do 1.5-2 batches in the 80 quarts so I figured the 140 quart would be a better fit. However, I'm worried about the size of the 140 quart...

Are combi ovens worth the price & what do they do (compared to a regular oven)?

Yeah you make a good point. So we're all plant-based, so we don't make any meat, so can't use the combi setting for that. Anything else the combi setting is really good for? We're also considering steamer unit and a convention oven - buying 2 separate units. What appealed to us about the combi...

    Hobart Mixer vs. another brand?

Not for bread. I actually use it to make things like falafels, veggie burger mixes, etc. (we're not a bakery)

    Hobart Mixer vs. another brand?

Anyone have any thoughts on Hobart standing floor mixer vs. another brand? I'd like to buy something very large. Probably 140 quarts or more. I'm currently using a Hobart, but have never tried anything else. Should I be checking out other brands? The one I'm using now is one that I am borrowing...

Combi Oven - Yes or No

Thanks for your advice! I am setting up a new kitchen for my meal delivery service and we cook in bulk - we do about 1000 meals in one day (hoping to grow further in the future). Right now, our stove top, oven and rice cookers are limiting us (different things we're cooking are holding up being...

Are combi ovens worth the price & what do they do (compared to a regular oven)?

Right now, our stove top, oven and rice cookers are limiting us (different things we're cooking are...

Combi Oven - Yes or No

Just curious - how do you cook pasta in there? I'm trying to decide if I should buy one next week and didn't know that was possible.
