    Electrolux panini grill

I went down to the restaurant today and tried to figure out what we were doing wrong. Yup...I found exactly the problem. Our staff was not using the grill on high because it tended to burn the panini by the time it was hot throughout. SO...I sent out a group text to the staff stating. Leave...

    Electrolux panini grill

Panini sandwiches are a good seller but the main downside is the time it takes to prepare and toast the sandwich until everything is hot and toasty. Customers don't understand that they might wait 10 minutes in busy times for their order. I saw they had panini sandwiches at the fast food Tim...

Commercial dishwasher in a home kitchen (or a consumer one with removable racks)

Since it is a 220 unit that is the same size as a residential dishwasher as far as I know you just have to hire an electrician to make sure you have a 220 outlet where the washer will be installed....pretty much like getting a commercial dishwasher installed in a restaurant.

    Salary advice

I'm glad you got what you asked for. If you accomplish all that you are definitely worth the money. I have been running a restaurant for many years (my own) and there is no way I could do all that you have on your plate. I think that the person's attitude around the workplace plays a huge...

    Tip option on debit/credit machine

For sure the staff would be thrilled if we added the tip option.

    Tip option on debit/credit machine

Interesting read. I did talk with my accountant today about the taxation responsibility of the restaurant owner concerning tips on the debit machine. I thought perhaps if the restaurant was audited it would be expected that the owner would take off the standard deductions from tips before...

    Tip option on debit/credit machine

The problem with trying it out is that once you are in it you are pretty much stuck. I would have to have a giant meeting with the staff with the agreement that this is a trial only....because if I did it and then quit they would be impacted financially so I would probably have to compensate...

    Tip option on debit/credit machine

Here is a pool I just don't whether to jump into or not. Most independent coffeeshop/bistro operations have the tip option on their debit machines. Our competitors such as Starbucks and Tim Horton's generally do not have the option. I have discussed this with my friends in the business who do...

Beer and wine in a coffee shop

Yes we are allowed to serve spirits. However, we try to keep things reasonably uncomplicated since we are so busy just trying to keep up with what we do now with all the milkshakes, smoothies, frappuccinos,, fish and chips...it is kind of a zoo in which all staff have to know everything. Beer...

Beer and wine in a coffee shop

I did read somewhere that Starbucks were going to try serving craft beer at select locations....since it isn't all over the place yet probably bombed. Anyway ChefBilly B thanks a lot for chatting. You know what I would like from this site is an exchange of ideas good and bad. If someone asks...

Beer and wine in a coffee shop

Not going to give up just yet. We do go through 650 pounds of coffee a month but coffee sales drop off in the evening. I am always trying new things so don't regret trying this. We do sell a whole lot of food perhaps because we work on volume and low prices for example fish and chips...

Beer and wine in a coffee shop

BYOB is not an option here in British Columbia. We just have beer and wine...no mixed drinks. We will soldier on with the idea of giving customers the option of a beer or wine with dinner and lots of people do come in for a meal in the evening. It is an easy thing to carry on with since there...

Beer and wine in a coffee shop

Just learning how this site works. I think it could be really helpful to discuss restaurant stuff with others in the biz. So throwing out our experience with the liquor thing. I could send a link to our media so other restaurants could look at our operation and see if they are similar. We...

Beer and wine in a coffee shop

I am not sure if we are a coffee shop or restaurant. People order at the till and we deliver to tables. We focus a lot on our La Marzocco Strada and it is a big part of our business. We do have a limited dinner menu with lasagna, fish and chips, shepherd's pie etc. We are extremely busy so...

Commercial dishwasher in a home kitchen (or a consumer one with removable racks)

Howdy Foodpump...I did a whole bunch of research today about this whole discussion we have here and one thing I learned that is no matter how long you are in this business there is always something new to learn. Our techy guy who knows everything about our dishwashers comes in for breakfast...

Commercial dishwasher in a home kitchen (or a consumer one with removable racks)

Yes odd, very odd, I agree. We of course scrape off food debris before putting dishes in the washer but we don't pre-wash them. We sometimes have to have the machine repaired since it runs pretty much constantly but the tech never says it is full of debris. Today I will show your response to...

Commercial dishwasher in a home kitchen (or a consumer one with removable racks)

One other very important thing that I should mention is that you must use very soft water to have a commercial dishwasher do it's thing. We have a big water softener. If it runs out of salt or breaks down we know right away because the dishwasher suddenly doesn't do a proper job. Buy a water...
