    Ice mans on the right track. Im assuming when your boss talks about no waste he means , the frozen wings wont go bad if you dont sell them in a timely manner, what i've seen lower volume restaurants do is get the largest wing size (jumbo), wash wings, par bake , strain juices, place on sheet...
