    Cinnamon in beef stew?

If you liked that.. try this recipe .. it knocks the socks off of anyone I've served it to. This is what I mentioned in my reply. Keep the cilantro on the side. But this is truly a beef stew with real spice and depth. It can be life changing for some :)

Baking a frozen, chicken-filled puff pastry roll

Well, since the filling was fully cooked prior to freezing there isn't a risk with that. I think @kuan is spot on. I can't see any other way to promise good results since puff pastry has to have high heat to work. A day or two in the fridge should be perfectly safe!

What did you have for dinner?

@jaymer looks great. All of my previous ones were done sous vide and finished with cast iron. I think your setup with the coals would be better since this cut handles the fire so well.

What did you have for dinner?

Here ya go! I had to manage some flare ups and probably could have let it go a little longer but it was a good experience.

What did you have for dinner?

Some big asparagus trimmed, peeled, and vacuum packed for sous-vide later. Doing picanha on the rotisserie with roasted potatoes and the asparagus and some dinner rolls I managed to bake this morning without disaster.

    mc-donalds fries

I know you were asking about making your own but just chiming in on a product that I think is REALLY close and works well both in the oven as well as an air fryer. They cook very quickly too because of how thin they are.

    Cinnamon in beef stew?

I've made an Indian dish that was essentially beef stew (the Muslims in India enjoy beef) and it included cinnamon. The other ingredient that really pushed it to amazing was actually malt vinegar.

February 2021 Challenge - Palm produce

Well another first for me. I've never worked with dates before. Talk about sticky.. everything was sticky. The goat cheese.. the dates. It was like working with honeycomb. So I did two types of stuffed dates. The first is a garlic herb goat cheese with pistachios. The second is a really...

February 2021 Challenge - Palm produce

Well @butzy said to post so here's one of many salad possibilities that incorporate hearts of palm. From a little poking around online this is supposed to be an Argentinian take on things. I must say the taste of the hearts of palm are really growing on me. I've always liked artichoke hearts...

February 2021 Challenge - Palm produce

@teamfat I agree.. I feel like there are notes of asparagus. A lot of people say they taste like artichoke hearts. I've never seen fresh hearts of palm, I believe they are very perishable. My father though as a poor and sometimes starving boy in Florida would eat "swamp cabbage" .. you don't...

February 2021 Challenge - Palm produce

Oh man. I am actually making a salad with my hearts of palm and stuffed dates for the immediate family only superbowl snacks tonight. I happened to pass a halal market yesterday and had to go in for a minute since I've never been in one and saw the dates. I will hold off posting them so others...

February 2021 Challenge - Palm produce

I guess I'll be first out of the gate. The first night Butzy announced the new theme I ran to the grocery store and bought several cans of palm hearts. I've never worked with them but I'd tasted them before and knew they were similar to artichoke hearts. I had to come up with my own dish but as...

February 2021 Challenge - Palm produce

Congrats @butzy .. I love the theme too. Might be hard for some that live where palms don't grow, but coconut milk offers a lot of possibility.

    January 2021 Challenge - rice!

@butzy I'm always intrigued with your posts. I recall you live in S. Africa? Or maybe I have that wrong. What kind of wild beasts do you have stalking your compound? I'm in America-Australia .. aka Florida .. we have all sorts of beasts but I think some of the 400 lb wild boars would be the...

    January 2021 Challenge - rice!

This looks great, and forgive me but it reminds me of something my mom would make for us as kids long ago. Not sure if everyone knows about canned chicken ala king lol .. she would sometimes put it over rice.

    January 2021 Challenge - rice!

Decided to do a Vietnamese rice noodle salad. This has a dressing of sweet chili, rice vinegar, and fish sauce. I absent mindedly left the cilantro I bought sitting on the counter. I'm surprised I didn't notice it missing. The veges were cucumber, carrots, shredded nappa cabbage, and some...
