Best fat for southern biscuits ?

I don’t really want to intrude on a Southern conversation but Yankees use Crisco to make biscuits (Spy or lard in the olden days). The flour difference is profound. I spent time in the South and fell in love with Martha White. At one time I’d fill a suitcase with both flour and corn meal to keep...

    Upscaling fish tacos

I assume this is a school/church fundraising auction situation and, if so, completely understand your situation... there’s always a balance of “I wanting to get my money’s worth” by the winner and “I want to give good value” by the host in these kind of charity auction situations. Suggest...

How much mashed potatoes for 10 servings

Enough. I always plan about 1/2 lb per person with meat and other veg. Rarely have much leftover.

    Pecan pralines using aluminum cookware

There could be a couple of reasons. Perhaps they feel that using stainless is more likely to ensure that a thicker pan is used so hot spots are avoided. Hot spots make burning sugar very difficult. But often the preference for stainless is that it’s easier to see the caramel color as it...

The huge Kalbi experiment (Korean short ribs — in the oven now). Crossing fingers.

That experiment might be worth a second try. You very well might reinvent the Kalbi! The time-temp may have just been a bit off. I would have guessed twice as long at 250. What was meat temp at end of cook?

I have tons of green onions - what to do?!?

Slice and dry. When dehydrated they store quite good. Use in future soups, stews, etc.

    Growing saffron

Correct, Morning Glory... it’s a labor of love I suppose. Here is 2 years of harvest. Almost enough to make a small paella. :) Now I wonder... plant more or just buy saffron?

Need help with Christmas dinner - Beef Bourguignon

... or go with both, roasted potato or noodles... it’s a holiday after all. Both wouldn’t be splurging too much... and both make useful leftovers. :) I’d second the motion for chuck but that’s my dog’s name... ha ha ha. He quivers and growls if I say that out loud!

Need help with Christmas dinner - Beef Bourguignon

Everything I was going to suggest was written by FF... If fresh pasta too intensive, a good quality dried egg noodle works well too. Cook in salted water, coat with a bit of butter, toss with parsley and pepper, and serve. Salad for first course? Green salad, perhaps, with a homemade...
