What did you have for dinner?

Made one of my favorite things today - Braised Rabbit with Pearl Onions and Morel Mushrooms. It's an involved meal, but well worth it. Nice meaty rabbit and dried morels along with pearls, shallot, garlic, white wine, and the liquid from reviving the mushrooms. All make for a delicious slow...

    Melt-in-your-mouth braised / slow-cooked meat dishes?

Osso Buco Try the Squid and Chorizo Stew I posted in the challenge. Bonus - if you use octopus it has to cook longer. Any joint of meat that is rich in collagen. Beef cheek, shank, neck, etc. Can you get venison? Ragout of rabbit with dried morel mushroom. Classic Bolognese.

PSA if you live near an Aldi store

I'm surprised to hear about the chicken. Mine sells Kirkwood brand and I've never had a problem with them. I wonder if they source from different suppliers around the country depending on store location?

PSA if you live near an Aldi store

I went to buy two hams today and all that good cheese I told you about is gone. They had one double glouster and a couple of manchegos. They had other cheeses, but not the premium stuff. I bought the two smallest hams I could find as most people were going for the bigger ones.

    Hanger Steak ...

Interesting thing about hanger is cows have two of everything except one brain, one heart, one liver and one hanger. It's one of my favorite cuts, but sadly discontinued at my local restaurant supply.

PSA if you live near an Aldi store

We were at Aldi the other day and I'm amazed at some of the products they import for the price points. I picked up a 5.3oz 1,000 day aged Gouda for $3.69 . Ok I thought I'd give it a try and it's about as good as the $21 per 1/2lb. my local cheese shop sells 5yr. aged Gouda for. I went back...

The huge Kalbi experiment (Korean short ribs — in the oven now). Crossing fingers.

You're this far along - take the meat off the bone and make chili, or something.

New York to ban Foie Gras!

You ought be able to purchase on line like from D'artagnan. I wonder if this bill was put forward by the same A-holes that tried to eliminate "games of chance" AKA raffles for NFP PS organizations and also "fishing derby's" for kids and club hunts? Damn down state so called "do gooders" trying...

preparing professional quantities of butternut squash

Top and tail then cut the bottom from the top keeping the seed end separate. I do the same as @cheflayne you need a stout knife that holds an edge. For the bottom I cut around the seed pod it's easier and faster than chasing strands.

I have tons of green onions - what to do?!?

The greens have good flavor. I save leek greens in the freezer for stocks and they lend well. Pesto is a great idea as is green sauce with tomatillos, jalpenos, poblanos, etc.

December Cooking Challenge 2019 -- Cured Meats

I've been putting off making sausage long enough. It looks like I'll have to bit the bullet this month. I have goose breast and venison in the freezer. When pork shoulder goes on sale I'll make a batch of kielbasa.

What did you have for dinner?

Venison liver, onions, bacon, mushrooms and potato. I trimmed the liver, soaked it in milk with garlic and hot sauce then did an egg wash and into seasoned bread crumbs. Fried in bacon drippings till just pink in the center. Not tough, very tasty and it's good for you. It doesn't get more...

What did you have for dinner?

Could do this in time for the challenge, but I made a slow stock from the smoked turkey we had last weekend. It started snowing yesterday so it was a perfect day for French onion soup. The crouton is leftover garlic bread and the cheese is a mix of smoked gruyere and manchego - quite a nice...

    Thanksgiving Cooking Challenge November 2019

I thought I'd get one more in, but planted garlic instead. It was a beautiful sunny day and as soon as it got above freezing @ 2pm I staked out my plot and put 208 cloves in the ground then covered with 3 bales of mulch hay.

Just found a new way to make (cook) sausage... L&S. What other meats can I use?

And here I thought you found a new way to "make" sausage . . . not a new way to "cook" sausage. I routinely sautee red cabbage in bacon drippings with fennel, or caraway, sausage and I add sliced apples at the end to cook just till soft then add the bacon back.

    Jennie O fully cooked turkey

Not that brand, but I buy Butter Ball Smoked Turkey when it's on sale. Fully cooked and just needs a good reheat and since it's pre- cooked it's been rested already.
