    Pasta for Chinese noodles ?

I am long since retired. So, it will be an at home experiment. Also, the dish I have in mind uses a much thicker noodle than Ramen, so that will not work for me. PS: I did not know that adding baking soda to the boiling water would keep the noodles firmer. great tip ! I think I'll 1st try using...

    Pasta for Chinese noodles ?

Hello Phatch, Those "lazy noodles" look excellent. I plan on trying a variety of different fresh leafy vegetables: cabbage, romaine, even lettuce as well as spinach. and I'm sure I'll be using chicken or pork "matchsticks". Though this recipe will be new to me, I get the impression that the...

    Pasta for Chinese noodles ?

I don't recall ever making Chinese noodles in all of my 55 years of cooking. So, because I live in Mexico, and Chinese fresh noodles are not available, I was wondering if I could use linguini instead ? Many recipes on the www, of course, but which spice/seasoning would you recommend ? I plan on...

Best fat for southern biscuits ?

I have always used Crisco shortening when making my Southern biscuits but for health reasons I am going to stop using Crisco (hydrogenated =very bad for arteries). So, I switched to using butter, however I do not get the same high-rise. I am hoping that I can get a discussion going to look at...

    Slightly bitter after taste ???

Ok, will do. I may try buttermilk and/or adding a tad of lemon juice to the milk. That, and a brand name baking powder (Rumford or Calumet)which are not readily available in Mexico.

    Slightly bitter after taste ???

I tried every possible variation of ingredients; without pepper, without onions, all new "fresh" ingredients, even changed the canola oil. Adding a bit of sugar did lessen the bitter after taste. Also, I changed the type of onion to a white onion. Still has a slight bitter after taste. I think...

Help needed with thick coating for shrimp

Yes, I agree. thank you. I have tried that, but it does not yield what I had in New Orleans. Since the product was produced, and then frozen, during the mfg process it's quite difficult to tell exactly how they did it.
