Missing being a part of this site!

Hello All! It has been quite some time since I have been active on here and I wanted to pop in and say hello and that I miss you all terribly. My computer died in early fall and I still have not replaced it. It was my key method of connecting with this site. Using my phone is ok to scroll...

    Three Quarter Boiled Eggs

I have seen and heard all debates on what makes it easy to peel. Old, fresh, vinegar, yada, yada, yada. Here’s the secret: put the eggs in when the water is at a rolling boil. I can crack the egg, pull it out of the shell and still have whole shell intact (aside from split). For 3/4 I’d say 8...

I have been super occupied with work the last few months, but I am able to squeeze in my favorite Thanksgiving leftover dish. Roll for Philly Cheesesteak

Maybe a LONG time ago. My mom used to work in Bala Cynwyd, but I don't specifically remember that place. My favorite growing up was Mama Nuccios in Somerdale, NJ. It has been a long time since I've been up there. The one place I am curious to try is Donkey's in Camden, NJ. Anthony Bourdain...

    Roll for Philly Cheesesteak

With the exception of the “whiz” at Pat’s and Geno’s. They pour that on top. I think, That is just a tourist trap. Cheese ends up all throughout. Thats the key. You are using the bun as the cheese melting lid. That is the secret of cheesesteaks.

    Roll for Philly Cheesesteak

There are a lot of people that swear by the Amaroso brand hoagie (sub) roll. I find that most cheesesteak places in Philly do not use that brand, but it is very close and commercially available so it is the go to roll. Basically, it is an Italian white hoagie roll that has a softer crust...

Monthly Food Challenge / updated list

Not to be picky, but the January 2015 challenge was repeated on the list for January 2016 for some reason. The actual January 2016 challenge was Peppers. I was the host. It was after my first win for Dec 2015 Brunch challenge. It seems Kgirl put the wrong year on her 2015 hosting. Lol

What did you have for dinner?

Day one of hurricane supply food. Meats are mostly processed so tonight’s dinner: Chicago Brats. I didn’t have poppy seed buns and forgot celery salt, but not bad for emergency rations. Lol. Fresh Brat, Neon Relish, Sport Peppers, Pickle, Tomato, Onion, Yellow Mustard, Giardiniera Hot Blend.

September Cooking Challenge - Challenge Yourself . . . with a Food Allergy

Great idea! A lot of thinking outside the box. I have a few ideas already. I am able to post as it looks like I am in the clear from Dorian. However, people in the Bahamas were not so lucky. It is beyond bad. It is devastating. If you can help in any capacity, please do.

August 2019 Cooking Challenge: Sauce (on something)

I would like to thank everyone for the great entries this month. The uptick in action was very enjoyable. Hopefully the trend continues. I am staring down the barrel of a cat 5 hurricane so my mind is a bit preoccupied. Sorry I will not be able to thank everyone for the great Submissions...

August 2019 Cooking Challenge: Sauce (on something)

Alright everyone: Lots of great entries this month. Still time for the last minute dish. Labor day weekend for us in the States could yield some saucy BBQ? We’ll see. I however, will probably be dealing with a storm named Dorian. I will keep faithful to picking a winner, but may not be on...

August 2019 Cooking Challenge: Sauce (on something)

Just to push the envelope of what is sauce; Beef Stew I cooked beef with celery, onion, garlic, carrot, tomato paste, bay leaf, thyme, beef base, pale ale, and beef broth. Strained, put beef aside. Made golden roux, added strained liquid, returned beef and added roasted carrots and par...
