What did you have for dinner?

It's soup weather here in the North East so a store had mushrooms on sale . . . Button mushrooms, leak, onion, a few small white carrots, herbs, mushroom stock, reduced vermouth, some dried morels and heavy cream. Topped with sauteed shiitake and some lardon with some toasted garlic chibatta...

What did you have for dinner?

I made old school "sloppy Joes" from scratch yesterday only with chicken thighs I ground fresh. It's a good, easy recipe that'll take you back to school days. Served with 'tater tots of course.

What did you have for dinner?

Super crisp chicken thigh, vegetable medley - mirepoix, leek, garlic, mushroom, potato, dried morel, chicken stock, corn starch and heavy cream to thicken, and a fresh crescent roll. (which I had a reaction to)

    Slightly bitter after taste ???

Might want to nix the black pepper - maybe add a little red pepper instead and see if that works. All your other ingredients appear to be in line with tradition. You might try adding some sugar like some recipes do. At least to try. Make a batch with just your base - sans seasoning. Divide...

    Thanksgiving Cooking Challenge November 2019

We celebrate here locally with a hike that ends up at a bar. Being from Detroit we always saw it as an extension of a reason to party.

    Thanksgiving Cooking Challenge November 2019

Reminds me of the first Thanksgiving in our son's house next door. They hadn't finished it enough to moved in yet and my mom and sister were visiting from Michigan that year. I "borrowed" some folding tables and chairs from the college and everyone brought food, signed their names on in a 2x4...

    Thanksgiving Cooking Challenge November 2019

T-day leftovers are magical - like an artists paint kit. This is a no brainer for us Yanks we all have family recipes that are handed down. Sometimes I'll throw a wrench in the gears with something new and people go like "hUH???" . . . then they taste then they dig right in. Do a little...

October Challenge: Savory Pumpkins and Winter Squash

@koukouvagia that looks really good. On another note - my pulled pork project had an interesting finish. Once I let the liquid separate in a bowl in the ice box I skimmed the fat off and found the root beer and jus had separated from the pumpkin. The liquid was delicious, but the pumpkin was...

October Challenge: Savory Pumpkins and Winter Squash

I bought a 4.5lb piece of pork shoulder the other day with the intention of making sausage, but time does not allow i. As an alternative I made a rub of salt, pepper, cumin, brown sugar, and smoked paprika. The herb was dried rosemary, thyme, parsley, ground ginger and five spice. This went...

What did you have for dinner?

We celebrated our anniversary today as well as my wife's negative breast cancer results!!!! So I made her her favorite - potato leek soup. I roasted the potatoes and leeks + did a mirapiox in bacon drippings, reduced white wine to deglaze and chicken bone broth. I had to add more broth after...

    Old chicken parts

IME an "off smell" is a sign of an "off taste". If it's past prime well . . . As for lemon bleach my soaker stones live in a lemon bleach/water bath and the water still smells like bleach.

    Old chicken parts

Chicken is one of the most fragile proteins next to fish. In my experience even the "sell by" date can be too late.

What did you have for dinner?

Chuck roast was $1.99/lb. this week so I snagged one with a nice piece of the rib eye cap on it. I blitzed the chuck part with some garlic and made burgers for dinner. There is nothing like meat ground 5 minutes before cooking. With caramelized onions, cheese, greens, garden tomato and dill...

October Challenge: Savory Pumpkins and Winter Squash

I did a twist on Carbonara last night - after rendering my lardon I deglazed the pan with butternut squash, shaved garlic, parsley and peperoncino along with some pasta water. After tempering my egg/cheese mix I added pasta then "sauce" to the pan to combine. The result was very tasty...
