I just read (and partially re-read) your fascinating Japanese Knives 101 article, which I stumbled upon after reading a short review by someone else about their new Konosuke Gyuto. (I think I have that spelling OK).
Anyhow, your article is so informative for folks who are new to the Japanese knife scene (like moi). Anyhow, I wish it was easier to find; I really enjoyed reading it and probably will a few more times as it all soaks in.
Lastly, much as I hate "stickies" in forums, I think your Japanese Knives 101 should be one on Chef Talk's knife forum. Thanks!
