I joined Cheftalk just to congratulate you on finding the yellow cake recipe that we’ve BOTH been searching for! As a home baker, I grew up with “Joy of Cooking” recipes. I did not know that a one-bowl vanilla cake could be this good! This cake is moist, delicious, has a fine crumb, and is so easy to make. Your directions were very clear to me.
After trying and failing at another one-bowl vanilla cake recipe this week, I was reluctant to use my good vanilla (Nielsen-Massey Madagascar Bourbon) in this recipe, but I’m glad I did now. I also thought that this cake would be dry, so I made the mistake of adding a simple syrup before frosting it, but that only made the cake doughy but still very good. For the icing, I used leftover poured chocolate fondant. Next time, I will use my best butter cream frosting instead. Thank you so very much for this great recipe! It is my 24-year-old daughter’s favorite cake now.
