Sweat shallots garlic. Add wine (preferably something mineral-e) reduce. Add red and yellow curry paste. Add mussels, cover and steam. When mussels are opened season to taste, add a splash of cream or creme fraiche to give it more body. Serve with garlic rubbed croutes or focaccia.
