Need advice on mastering the convection steam oven

    I am starting to cook at a hospital. Convection steam ovens are new equipment to me. There are no standardized recipes. So I asked the cook who trained me and has 9 years experience, "How long should I cook the 100 servings of frozen vegetables?" The response was: "Til they are done. " She continued, " I don't measure or time anything". She proceeded to take a green bean out of the steam oven and smash it on the stainless counter top with her thumb. "Yeph. When it mashes real soft it's done. By the way you gotta smother the vegetables with a lot of liquid margarine to give them some kind of flavor."
    So I went to the internet and downloaded the users manual. It explained when to use perforated pans & when to use the non- perforated pans. It gave me cooking times for some vegetables, meats, & egg dishes. I understand this is a moist cooking method. I have been watching videos on you tube about steam ovens but they are mostly for home use. Any suggestions on a book, resource or person who could help me be a better cook ?

    20 yrs in tiny and large kitchens
    We got one a couple years ago and have just made it up as we go. I'll post more when I have time. Just check things early, you can always stick it back in.

    Hey, frozen vegetables usually are counted as ready vegetables , they usually take from 7 to 15 minutes in steam oven.
    You can add salt pepper garlic etc. I personally prefer to put them in steam oven for 5 minutes just to defrost, then roast them on the pan with hot oil with some onions garlic basil and cherry tomatoes.

    Your co-worker seems like someone who has lack of confidence , she's afraid that someone will do het job instead this is why she's saing that she doesnt pay attention to time etc, there are the basics that they could share but she didn't.

    Keep on trying, someone will notice one day that you want the knowledge and he will share it with you.

    Hi,
    Our veggies not frozen standard flowered 3 min steam and into ice bath so we just blanch for a large function

    Ooops. I read this on too little sleep. We got a commercial steamer, not a steam oven. Sorry, not the same thing.
