I became a member after reading your article on Japanese knives.
I'm a sharpener at a shop in Chicago that has been in business for over 25 years.
      Your article is very accurate.
      Kudos.

I just read (and partially re-read) your fascinating Japanese Knives 101 article, which I stumbled upon after reading a short review by someone else about their new Konosuke Gyuto. (I think I have that spelling OK).

Anyhow, your article is so informative for folks who are new to the Japanese knife scene (like moi). Anyhow, I wish it was easier to find; I really enjoyed reading it and probably will a few more times as it all soaks in.

Lastly, much as I hate "stickies" in forums, I think your Japanese Knives 101 should be one on Chef Talk's knife forum. Thanks!

      Chris,

Thank you so much for the CoCo review. I have spent a week wondering if I should buy it or not and after that review, I am going to pick it up. Thank you so much for the time and energy ....I really enjoyed the points you made and agree 100%. Petalsandcoco
