Sherry: The ageing system for Sherry is the Solera System, unique in all the world. This white wine, indigenious to Jérez de La Frontera, Cádiz, Spain is aged as follows: The system is made up of a number of stages through which the younger white wines pass, acquiring the characteristics of the older wines, thus ensuring the continuity of the method. The butts ( oak casks of 500 litres each ) in the earlier stages are known as Criadoras ( a caretaker or Guardian ), and the last or oldest casks are the Solera stage from which the wine is taken for bottling.
