Pimentón de La Vera, Extremadura, Spain is a Capsicum genre red chili pepper which is harvested, dried, grinded into powder, smoked and used as one would utilise ground Paprika. This smoked ground red chili pepper is used to flavour charcuterie, soups, legumes, goat cheeses of the La Vera zone, stews, meat and chicken dishes requiring a bit of the piquant and in spice rubs. Ibores, goat cheese is a semi soft delicacy and goat cheese variety in the same designation origin, thus, it is treated with Pimentón on its´ rind. Pimentón comes in 2 varieties, piquant and sweet.
