Jabugo Pata Negra Ham: Designation of origin, Jabugo, Huelva and Aracena, Huelva in southwestern Spain, these sepia colored black footed hogs gorging on acorns ( bellotas ) among the cork oaks are the pride of glory of Spain. Due to this hog´s feet being black and this delicacy cured in an air dried, not smoked process and aged for years as a Reserve or Gran Reserve, Jabugo produces the most renowned acorn fed hams of the Iberian Peninsula.

Teruel, Áragon and Serrano ( province of Salamanca ) hams are distinctly different and bred from pinkish pigs verses hogs.
