Ingredients to make Hearty Lamb Pilaf:
  • 1 pound of ground lamb
  • 2 peeled and finely chopped onions
  • 2 cloves of crushed garlic
  • 4 and 1/2 cups of chicken broth
  • 2 cans of undrained whole tomatoes
  • 2 cups of long grain rice
  • 1 teaspoon of crushed dried oregano
  • 1/2 cup of raisins
  • 1 jar of diced pimientos
  • 1/2 of teaspoon salt
  • 1/2 teaspoon of ground black pepper
  • 1 package of frozen peas
How to prepare Hearty Lamb Pilaf:

Combine the ground lamb, finely chopped onions and garlic in a large saucepan and cook over a medium heat for about 8 to 10 minutes until the lamb gets browned and onion is tender. Drain out the excess fat.

Next, stir in chicken broth, tomatoes, rice and oregano in a pan and bring to a boil. Reduce the heat and simmer uncovered for 20 minutes, stirring occasionally. Add half cup of raisins, pimientos, salt and pepper. Cook uncovered for an additional 15 minutes, stirring well.

Add the frozen peas during the last 3 to 4 minutes of cooking. Finally serve in deep bowls or rimmed plates, with grated Romano or Parmesan. Get lot more from
