Coquilles St. Jacques denotes Sea Scallop, a Northern Atlantic exquisite white small disc shaped shellfish delicacy which is prepared either by baking with breadcrumbs in the shell ( French Style ) or by sautéing in extra virgin olive oil ( or butter ) and then placed on the empty shell which is the Galician method of preparation ( Northwestern Spain where the sea scallop is the sacred symbol of the Santiago Pilgrim´s Walk ).
