Clamart is a city in France famous for their pea crops. A specialty with pea puree or cooked in another form is called a la Clamart.

Examples would be : Clamart soup (puree of fresh peas in consomme), poached eggs Clamart, puff pastry Clamart, there is also a garnish called Clamart which are tartlets - artichoke bottoms filled with buttered peas.
