You might have gone through many salad recipe. What's new here? “All salad are healthy and tasty as well”. Wait! You are wrong. Do a diabetic patient have a fruit salad? No. Not at all. It will cause a sharp spike in blood sugar. Even If you are not diabetic, excessive intake of fruit salad can increase level of calories. Why don't you switch on to something really healthy and will remain so even consumed excessively. Vegetables are something which is recommended by everyone to anyone. Try this below simple recipe to make a vegetable salad along with sprouted beans.

I really enjoy preparing this dish and love to get compliments from my close ones. McDang, one of the top chef in Thailand is my inspiration and I truly follow him. I am even crazy about Marion's Kitchen specially  Pad Thai recipe and San Choy Bow recipe. 

Above pad thai is one of my faivourite dish. And here is mine which you can enjoy at any time.

Prep Time: 15 minutes Cook Time: 4 minutes Makes: 2 servings


Dressing Ingredients

1 tsp olive oil

½ clove finely chopped garlic

½ tsp sugar

1 tsp lemon juice

½ tsp soy sauce

¼ tsp dry red chilly flakes

Other Ingredients

½ cup broccoli florets

5 mushrooms

2 to 3 lettuce leaves

¼ cup sliced onions

1 tbsp finely chopped celery

½ red capsicum

¾ cup bean sprouts

1 tbsp chopped chopped coriander for garnishing


  1. Mix all dressing ingredients together in a blender and form it into coarse paste . Keep this aside

  2. Boil water in a medium sized bowl. Add broccoli and mushrooms in it and cook for about 3 to 4 minutes. If cooked, then let it cool down. And discard hot water from bowl and add cold water into it.

  3. Chop mushrooms into thick wedges and keep it aside

  4. Make the lattice crisp by letting it into ice-cold water for about 30 minutes. After this, drain and arrange these leaves at the bottom of the bowl.

  5. Mix mushrooms, broccoli, onion, celery, capsicum and bean sprout into one bowl and keep it aside.

  6. Pour dressing over the above mix and toss it well

  7. At last, spoon it over the lettuce leaves

  8. Garnish it with coriander and serve the delicious dish immediately
