Bacalao al Pil Pil, translates to codfish simmered with olive oil, garlic and chili pepper. Pil Pil denotes " simmered " in clay earthenware, a traditional Basque dish. The fish is cooked in earthenware and never stirred, however shaken to amalgamate the olive oil, garlic and the fish pan juices. The thinly sliced garlic and the flakes of red dried Basque chili pepper provide the profundity.
